This cilantro lime jalapeño chicken is our go-to grilled chicken recipe for meal prep, and it never disappoints. It’s made with simple, fresh ingredients and packs so much flavor into every bite. The easy marinade comes together in under 10 minutes and uses just a handful of pantry staples—lime juice, cilantro, olive oil, cumin, and a touch of jalapeño for a little kick.
Don’t worry—this chicken isn’t spicy! With the seeds and ribs removed, the jalapeño adds flavor without heat. It’s totally kid-friendly.
This is a great meal prep chicken recipe, as you can use it in so many ways (see my ideas below). Grill a batch at the start of the week and enjoy it in chicken tacos, burrito bowls, salads or wraps.

Ingredients
2 pounds boneless skinless chicken breasts, or thighs
1/4 cup olive oil
2 tablespoons freshly squeezed lime juice
1/2 jalapeno, seeds and ribs removed, finely minced
1 packed tablespoon minced cilantro
1 teaspooncoarse or fine Celtic Sea salt
1 teaspoon ground cumin
Few twists of freshly ground pepper

Put all the ingredients for the marinade in a medium sized bowl and whisk together. Dredge each piece of chicken into the marinade, making sure to coat all sides of the chicken.
Put the chicken into the refrigerator to marinate for at least 30 minutes, or up to 2 hours. Don't marinate the chicken for longer than 2 hours, as the citrus might cook the chicken a bit and make it gummy.
Note:If you happen to have chicken breasts that are really large, take a knife and slice the breast in half lengthwise so that the breast is much thinner. This can really help if you have some breasts that are thin and others that are thick. The more consistent the breasts are in size, the better they will cook and be done at the same time.
Preheat the grill tomedium-high heat.
Bring the marinated chicken out to the grill. Turn down the grill to medium heat. Place the chicken breasts on the grill (reserve the excess marinade left in the bowl) and grill for 5 minutes, flip the breasts over and using a spoon or pastry brush, add the remaining marinade to the top of each breast.
Grill the second side for roughly 5-6 minutes, or until golden and deep grill marks appear, and the internal temp registers 165ºF in the thickest part of the breast.
Note: After you flip the chicken over for the second 5-6min cooking time, do a quick temperature check at the 4-5 min mark. We often find that meats on the grill (or even in the oven), cook faster later in the planned total cooking time. An extra minute of cooking time has a larger impact on the internal temperature than a minute at the beginning. We’ve learned this fact over the past few years when we’ve dried out chicken on the grill because the internal temps got away from us late in the cooking time.
Let chicken rest 5 minutes on a clean cutting board, and then slice crosswise into strips.
